Anaerobic thermal-shock fermentation from Cauca, Colombia. Expressive notes of white peach, wild hibiscus, and clover honey with a lingering sugarcane sweetness.
Direct Producer Trade
We work directly with generational smallholders in Huila, Yirgacheffe, and Antigua, paying an average of 140% above fair-trade floor prices.
Cast-Iron Drum Roasting
Roasted on our restored 1974 vintage Probat drum roaster. Gentle convective airflow captures natural fruit acidity and delicate floral terroir.
36-Hour Wild Leavening
Every loaf and morning bun is naturally fermented with our heritage sourdough starter, organic stone-ground flours, and pure sea salt.
